    Vegetables, seafood and pasta mixed into one dish with a creamy mushroom based sauce makes this dish delicious. I serve mine with garlic bread on the side to mop up any extra sauce.

    Ingredients
    Serves: 4 

    • 400g angel hair pasta
    • 280g broccoli, cut into bite size pieces
    • 2 tablespoons olive oil
    • 200g precooked, deveined and deshelled prawns
    • 3 tablespoons butter
    • 2 cups sliced mushrooms
    • 1 (400g) tin condensed cream of mushroom soup
    • 1 tablespoon lemon juice
    • 2 cups (500ml) water
    • salt and pepper, to taste
    • garlic powder, to taste
    • 2 teaspoons dried parsley
    • 2 teaspoons dried basil

    Directions

    1. Cook the pasta in a large saucepan of salted water until al dente.
    2. Steam broccoli in a double boiler.
    3. Heat olive oil in a frypan over medium/high heat and add prawns. Cook for 3-5 minutes. Remove from frypan and keep warm.
    4. Add butter to the same frypan and melt. Add mushrooms and saute for 5-7 minutes.
    5. Mix in soup, lemon juice, water, salt, pepper, garlic powder, parsley and basil. Stir over medium heat for 8 minutes.
    6. Mix together broccoli, prawns and pasta then pour over sauce.

    My family loved this recipe, I used asparagus spears instead of broccoli, and added in some minced roasted garlic...it was amazing! - 18 May 2013
