Sweet, quick and easy. Food colouring can be added for a more interesting dish and allowing to fit into themes, e.g. green for St Patricks Day.


Serves: 8 

  • 1 (400g) tin condensed milk
  • pulp from one coconut
  • food colouring, if desired

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Heat a little oil in a frypan,
  2. Add coconut pulp then cook for a few seconds to just under a minute.
  3. Add condensed milk and cook until thickened.
  4. Add in food colouring if desired, cook for a few minutes.
  5. Take off the heat and allow to cool very slightly to the touch only then shape quickly into balls or transfer the hot mixture into a square baking tray using a knife to spread evenly and neaten the edges if necessary.
  6. Cool then serve balls or cut sheet into squares then serve.
