Xtra Healthy Grain Bread

    This is an 'xtra healthy' grain bread that features many flours and grains including soy, rye, wheat, nut seed mix and bran.

    Serves: 8 

    • 1kg plain flour
    • 1/2 cup (125ml) milk powder
    • 1/4 cup soy flour
    • 1/4 cup oat bran
    • 1 cup rye flour
    • 2 teaspoons salt
    • 2 tablespoons nut and seed mix of choice or linseeds
    • 2 tablespoons lecithin granules
    • 1/4 teaspoon citric acid
    • 4 cups warm water
    • 1 tablespoon honey
    • 1 tablespoon brown sugar
    • 4 teaspoons yeast
    • 2 tablespoons olive oil

    1. In a large bowl mix together the plain flour, milk powder, soy flour, oat bran, rye flour, salt, nut seed mix, lecithin granules and citric acid.
    2. Mix all the water with 4 cups of dry mix, honey, sugar and yeast.
    3. Beat on high speed for 3 minutes, this brings out gluten.
    4. Add oil and mix through.
    5. Leave 5 minutes then add rest of dry mix.
    6. Knead with dough hook for 5 minutes or by hand for 10 minutes. Dough will be rather soft at this stage.
    7. Place dough in a large oiled container or two smaller ones and roll around until coated lightly all over with oil.
    8. Cover with plastic wrap. Place wrap directly on top of dough and coming up sides of container so as to seal in but allow for rising.
    9. Place in warm area such as a sink with hot water until doubled in size.
    10. Punch down dough and knead on floured surface for 2 minutes.
    11. Divide into 2, shape and place in bread tins. Sprinkle lightly with flour or brush with lightly beaten egg then sprinkle with sesame seeds or seeds of choice.
    12. Bake at 200 degrees C for 30 minutes.
