A yummy twist based on the original Rock Cake recipe using 'Crunchy Nut Cornflakes'. A healthy treat for the whole family.


Serves: 10 

  • 110g butter, room temperature
  • 1/2 cup (125g) sugar
  • 1 3/4 cup (220g) sifted plain flour
  • 1/2 cup (90g) sultanas
  • 1/4 cup (45g) currants
  • 1 cup Crunchy Nut Cornflakes
  • 2 teaspoons baking powder
  • 1/4 cup (65ml) milk

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat oven to 180 degrees C.
  2. Cream butter and sugar.
  3. Add all remaining ingredients.
  4. Mix well until the mixture resembles a stiff dough.
  5. Place heaped teaspoons of mixture on greased baking tray forming rocky shapes.
  6. Bake in the preheated oven for approximately 15 minutes or until golden.
  7. Allow to cool and store in an airtight container.
