Chicken Mushroom Alfredo

This is a delicious pasta recipe which I also use as a sauce over baked or sauted chicken. It is an excellent and very flavourful sauce that is no fail and great for entertaining.


Serves: 4 

  • 125g butter
  • 1 cup spring onions, diced
  • 3 cloves garlic, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons flour
  • 1 cup mushrooms, sliced
  • 1/2 cup (125ml) cream
  • 1 1/2 (375ml) milk
  • 1 cup parmesan cheese, grated
  • 4-6 chicken breasts, cooked and cubed

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Melt butter with the spring onions and garlic. Saute as you add the salt and pepper; stir.
  2. Add the flour and mix well for 1 minute more.
  3. Add the mushrooms and continue to saute over med/low heat.
  4. Add the milk and cream together. Turn heat to low. Be careful not to let this boil as it may cause your sauce to be grainy.
  5. Add the cheese and mix until smooth.
  6. Heat the sauce for a few minutes then add the cubed chicken. You may serve immediately or put the sauce into a slow cooker on low for a few hours.

Super tasty. Slightly oily - from the cheese, I'd say. Thumbs up, even from a husband who's not a fan of dishes that are creamy. - 05 Nov 2012
