Dukkah is a traditional Egyptian recipe for a coarse spice blend that traditionally you dunk olive oil coated bread into. It is also good used as a rub in fish, lamb or chicken.

Ingredients
Serves: 24
- 1/2 cup cashews
- 1/2 cup hazelnuts
- 1/2 cup sesame seeds
- 2 tablespoons whole coriander seeds
- 2 tablespoons whole cumin seeds
- 2 tablespoons freshly ground black pepper
- 1 tablespoon fennel seeds
- 1 teaspoons flaked sea salt

- In a dry frypan add the nuts and seeds and toast until fragrant. Cool.
- In a morter and pestal add the seeds and gently pount to break up but don't over grind. Add salt and mix.
- Store in an air-proof container until needed.
