Chicken, Apricot and Sultana Salad

    This chicken, apricot and sultana salad recipe is great for warmer weather. It can be served with a fresh garden salad or used as a sandwich filling.

    Serves: 6 

    • 1/4 cup fresh apricots, pitted and diced
    • 50g sultanas
    • 1kg chicken breast, cooked, skinned and diced
    • 150ml mayonaise
    • 1 1/2 teaspoon curry powder
    • 1 tablespoon apricot jam
    • 1 teaspoon lemon juice
    • salt and black pepper, to taste
    • 100g walnuts, toasted

    1. Put all the ingredient in a bowl and mix well.
    2. Serve with salad or in a sandwich
