This is a different take on pesto + prawns + pizza. All the ingredients of pesto - olive oil, garlic, basil, pine nuts and parmesan cheese - are placed on the base of the pizza base, then topped with prawns, anchovies and mozzarella cheese. Very easy, and very tasty. I find that with pizza toppings, less is more!!
2 pizza bases
500g cooked, shelled prawns - fresh or frozen
30g anchovies, roughly chopped
2 tablespoons pine nuts , toasted if you like
1 bunch basil, washed
2 tablespoons extra virgin olive oil
3 cloves garlic, crushed
4 tablespoons parmesan cheese
4 tablespoons mozzarella cheese

Combine extra virgin olive oil and crushed garlic in small dish, then (using a pastry brush) spread over the bases of the pizzas. Roughly tear off basil leaves and scatter over the two pizza bases, followed by pine nuts and parmesan cheese. Top with prawns, then anchovies, then sprinkle the mozzarella cheese on top.
Bake in a moderately hot oven approximately 20-25 minutes.
