Creamy Bacon and Mushroom Penne

    Love this simple and tasty bacon and mushroom cream sauce that I serve over penne, it tastes even better if you can get good quality smoky bacon.

    Serves: 6 

    • 500g penne
    • 8 rashers smoked bacon, diced
    • 2 cloves garlic, crushed
    • 1/2 onion, finely diced
    • 200g chopped fresh button mushrooms (or 1 cup chopped canned champignons);
    • 30g butter
    • 1 1/2 cups cream
    • salt and pepper, to taste
    • 1/2 cup grated Parmesan cheese

    1. Bring a large saucepan of water to the boil and cook the penne as per the packet's instructions.
    2. In a frying pan over medium heat, cook bacon until the fat starts to melt, add the garlic and onion then cook until the onion becomes soft and transparent. Add the mushrooms and butter and further cook until the mushrooms are soft.
    3. Add the cream and season with salt and pepper to taste, simmer until the cream reduces by half. Stir through the cooked penne and serve with a sprinkling of parmesan cheese.
