Calypso Pine-Lime Biscuits

    You can really taste the Caribbean with these soft delicious bikkies Very flavoursome and the biscuits stay soft. This is my own recipe.

    Serves: 15 

    • 125g butter, chopped
    • 1 cup (155g) brown sugar
    • 1 teaspoon vanilla essence
    • 1 egg
    • 125g plain flour
    • 60g self-raising flour
    • 90g rolled oats
    • 45g desiccated coconut
    • 1/2 cup tinned crushed pineapple, well drained
    • 2 teaspoons finely grated lime rind
    • 2 tablespoons lime juice

    1. Preheat oven to 175 degrees C. Grease a baking tray.
    2. In a bowl, thoroughly mix the brown sugar, oats, butter, coconut, all-purpose flour, self-rising flour, pineapple, egg, lime juice, lime rind and vanilla essence.
    3. Drop by rounded spoonfuls onto the prepared cookie sheet.
    4. Bake 12 to 15 minutes in the preheated oven, until lightly browned. Cool on wire racks.

    These cookies were a little like eating a granola bar. You could taste the coconut and pineapple in each bite. If I made them again I would try baking them as a bar. The dough was a little moist for spooning onto the cookie sheet.  -  04 Aug 2006  (Review from Allrecipes USA and Canada)
