Gluten Free Bacon Quiche

    Bacon is the answer to everything, no gluten, no worries; this is a perfect quiche recipe that can be shared with all your friends.

    Serves: 4 

    • Crust
    • 60g butter
    • 1 cup gluten free flour such as rice flour
    • 2-3 tablespoons water
    • Filling
    • 4 eggs
    • 1 cup milk
    • 1 onion, diced
    • 1 clove garlic, crushed
    • 12 rashes bacon
    • 1/2 cup gluten free self raising flour
    • 1 cup grated cheese

    1. Preheat oven to 180 degrees C. Grease a 23cm quiche dish.
    2. Crust: Rub the butter into the flour until it resembles breadcrumbs. Add the water and bring together to form a soft ball of dough. Wrap in plastic wrap and leave to rest for 30 minutes.
    3. Roll out pastry on a floured surface, lift gently into the flan tray then press into place with fingers.
    4. Filling: Mix all the filling ingredients together in a large bowl and pour into the pastry in the flan dish. Sprinkle with grated cheese.
    5. Bake for 1 hour in the preheated oven until the filling is set.
