Green Cod Curry

    This is a good and straightforward green fish curry which uses cod but you can substitute any firm fleshed white fish.

    Serves: 4 

    • 500g fresh cod
    • 1 small can (375g) Thai green curry simmer sauce
    • 1 small can (165ml) coconut cream
    • 1 teaspoon chopped dill
    • salt and pepper to taste
    • 1 medium green capsicum, seeded and sliced
    • 1 medium red onion, sliced
    • 1/2 leek, sliced
    • 3 cloves garlic, crushed and chopped

    1. Preheat oven to 190 degrees C.
    2. In a saucepan over medium-low heat, mix the coconut cream, curry sauce, dill, salt and pepper. Cook until heated through.
    3. Heat the olive oil in a frypan over medium-high heat, and cook the capsicum onion, leek and garlic about 5 minutes.
    4. Place the cod in a baking dish. Cover with the vegetables, and top with the coconut cream mixture.
    5. Bake 30 minutes stirring sauce and vegetables occasionally, until fish is easily flaked with a fork.
