    This is a good and straightforward green fish curry which uses cod but you can substitute any firm fleshed white fish.

    Ingredients
    Serves: 4 

    • 500g fresh cod
    • 1 small can (375g) Thai green curry simmer sauce
    • 1 small can (165ml) coconut cream
    • 1 teaspoon chopped dill
    • salt and pepper to taste
    • 1 medium green capsicum, seeded and sliced
    • 1 medium red onion, sliced
    • 1/2 leek, sliced
    • 3 cloves garlic, crushed and chopped

    Directions

    1. Preheat oven to 190 degrees C.
    2. In a saucepan over medium-low heat, mix the coconut cream, curry sauce, dill, salt and pepper. Cook until heated through.
    3. Heat the olive oil in a frypan over medium-high heat, and cook the capsicum onion, leek and garlic about 5 minutes.
    4. Place the cod in a baking dish. Cover with the vegetables, and top with the coconut cream mixture.
    5. Bake 30 minutes stirring sauce and vegetables occasionally, until fish is easily flaked with a fork.

    Easy and very very tasty. I used straight up coconut milk and green curry paste and there was more than enough liquid to keep the fish moist in the oven and on our plates.  -  08 Feb 2009  (Review from Allrecipes USA and Canada)

    Excellent recipe! Be careful not to overdo the curry, needs just the right amount to not overpower the flavor of the fish. Meal turn out great, went well with brown rice.  -  07 Oct 2005  (Review from Allrecipes USA and Canada)
