    Palm sized patties double coated in breadcrumbs with a chicken, bacon and cheese filling seasoned with salt and pepper. Eat alone or in a burger.

    Ingredients
    Serves: 4 

    • 4 chicken thighs
    • 4 rashers bacon, diced
    • 1 1/2 cups cheddar cheese, grated
    • 2 eggs, whisked
    • 1/2 cup breadcrumbs
    • 1 pinch salt and pepper, to taste

    1. Beat thighs out then dice into small pieces.
    2. In a bowl mix the chicken, bacon, grated cheese, salt and pepper.
    3. Roll into palm sized thin oval shaped patties then coat in egg followed by breadcrumbs. Repeat the egg and breadcrumb coat.
    4. Deep fry until the chicken is cooked. Break apart one to ensure the chicken pieces are cooked.
