Lime and Tequila Burritos

    This burrito combines sizzling steak strips marinated in lime and tequila wrapped up with an avocado salsa and a sour cream chutney sauce.

    Serves: 4 

    • 1 large rump steak
    • 1/2 cup (125ml) lime juice
    • 1/2 cup (125ml) tequila
    • 1 avocado
    • 1/2 onion, finely sliced
    • 2 tablespoons fresh coriander diced
    • 1 lime, juiced
    • 200ml sour cream
    • 2 tablespoons spicy fruit chutney
    • 12 tortillas

    1. Marinate steak in lime juice and tequila for at least 1 hour.
    2. Cook steak in hot frypan until just done. Let rest for 10 minutes. Slice into long strips.
    3. Mash together the avocado, onion, coriander and fresh lime juice. Set aside.
    4. Combine sour cream and chutney then set aside.
    5. Heat tortillas in oven for 10 minutes.
    6. Roll slices of meat, avocado and sour cream in tortillas to make burritos.
