Yummy Mexican Dip Platter

    This is a platter of dips inspired from Mexican flavours like Guacamole. I make a big tray of this before the football and we snack on it all the way through, by the end of the game everyone is so full I don't even need to cook dinner.

    Serves: 8 

    • 4 mashed avocados
    • 2 teaspoons lemon juice
    • salt and pepper, to taste
    • 250ml sour cream
    • ½ cup (125ml) mayonnaise
    • 1 packet taco seasoning mix
    • 1 bunch spring onions, diced
    • 3-4 tomatoes, diced or hot salsa
    • 1 small tin pitted olives, sliced
    • 1 large tin refried beans
    • 250g cheese, grated
    • 1 teaspoon chilli powder
    • 1 bag corn chips

    1. In a small bowl mash together avocados, lemon juice, salt and pepper.
    2. In a separate bowl mix together sour cream, mayonnaise and taco seasoning.
    3. In a separate bowl mix the spring onions, tomato and olives.
    4. Place all the mixtures and refried bean in four separate piles on a serving tray then sprinkle with cheese and chilli powder (if you don't like the heat use paprika).
    5. Serve chilled with corn chips to dip into all the flavours.
