These delicious dessert muffins are best eaten warm from the oven. The addition of yoghurt makes the muffins wonderfully moist and soft - if they have to travel, pack them carefully because they will squash out of shape easily. This is for a blender but you can mix with a bowl and spoon if you prefer.
1 medium orange
125g melted butter
1½ cups (190g) flour
1 tsp baking soda
1 tsp baking powder
1 pinch salt
1/2 cup (110g) white sugar
1 small tub (200g) plain unsweetened yoghurt
1/2 cup chocolate chips
a little raw sugar

Preheat oven to 200 degrees C. Grease a 12 cup muffin tin.
Peel the orange, removing as much pith as you can, chop the flesh roughly and whiz in food processor until mushy.
Add the egg and melted butter, and process until combined. Add flour, baking powder, baking soda, salt, sugar and yoghurt and process together till well mixed. Finally add the chocolate chips and whiz briefly to mix, without crushing the chocolate chips. If you're mixing with a spoon, it's fine to add the chocolate chips along with the other dry ingredients.
Spoon the mixture out into muffin tins and sprinkle with raw sugar.
Bake for fifteen minutes or until golden brown. These muffins are delicious hot or cold.
