Steamed Pudding with Golden Syrup

This is an old-fashioned English winter pudding recipe; although not so old-fashioned that it includes suet. This pudding warms tummies on cold and dreary midwinter nights.


Serves: 4 

  • 1/2 cup (125ml) milk
  • 60g butter
  • 1 teaspoon bicarbonate soda
  • 1 cup (125g) flour
  • 1/2 cup (125g) sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ginger or cinnamon, optional
  • 2 tablespoons golden syrup, more to taste

  1. In a saucepan melt the butter in the milk then add bicarbonate soda to make a bubbly mixture.
  2. Add the flour, sugar, baking powder, ginger or cinnamon then mix well.
  3. Put the golden syrup in the bottom of the pudding steamer then pour in the mixture.
  4. Cover and boil in a saucepan of water for 1 1/2 to 2 hours or until the pudding shrinks slightly from the sides of the steamer basin.
  5. Serve hot spooning the golden syrup from the bottom over the pudding. Goes well with ice-cream, cream or custard.
