    A very easy and delicious recipe for the whole family. Use fresh apricots if they're in season. Serve on rice with your choice of vegetables. It really is delicious!

    Ingredients
    Serves: 4 

    • 8 chicken thigh pieces (with bone)
    • 1 packet french onion soup mix
    • 1 tin (400ml) apricot nectar
    • 1/2 large tin (about 400g) apricot halves

    Directions
    Preparation:5min  ›  Cook:45min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C. Place chicken in baking dish. Mix together the dry soup and the apricot nectar and pour over the chicken pieces. Cook for about 30-40 minutes till flesh is no longer pink. Add drained apricot halves and cook a further 5 minutes.

    Such a delicious and simple recipe. I used my pressure cooker so it only took 25 mins which added to the appeal! Will definitely be making this more often - 27 Apr 2011

    Something else. I cooked this meal in my pressure cooker and it was delicious and only took 25 minutes. It was the first time I used my pressure cooker and I was very happy with the results. - 27 Apr 2011

    Altered ingredient amounts. I left out the apricot halves, but I don't think that altered the taste. - 08 Aug 2009
