Sicillian Spaghetti

    Such a simple pasta dinner recipe that primarily features garlic and anchovies for a strong but enjoyable flavoured pasta.

    Serves: 4 

    • 1 (500g) packet spaghetti
    • 2 tablespoons olive oil
    • 75g anchovies, diced
    • 4 cloves of garlic, crushed
    • 1 cup breadcrumbs
    • salt and pepper, to taste
    • 200g grated parmesan cheese

    1. Boil water in a large saucepan with a splash of olive oil and pinch of salt then cook the spaghetti as directed on the packet; about 10-12 minutes.
    2. Heat olive oil in a frypan then fry the anchovies and garlic for about 2 minutes while stirring all the time. Add the breadcrumbs, when they are warmed through turn off the heat. Season to taste.
    3. Once the pasta is cooked, drain, place in a serving bowl and toss the anchovies mix through. Sprinkle with parmesan cheese then serve.
