Mashed Turnip with Bacon

    Boiled turnips are mashed with butter, garlic, fresh pepper and crispy fried bacon. This makes a very delicious vegetable side dish in place of potatoes.

    Serves: 4 

    • 1 kg turnips, peeled and cubed
    • 2 tablespoons butter
    • salt and freshly ground black pepper, to taste
    • 1 tablespoon minced garlic
    • 230g bacon
    • 1 to 2 tablespoons rendered bacon fat

    1. Cook turnips in a saucepan of salted water until very tender.
    2. Meanwhile, in a frying pan, fry the bacon until nice and crispy. Remove from the frying pan, dice and set aside. Reserve 2 tablespoons of the fat.
    3. Drain turnips, then mash with butter, salt, pepper and garlic. Add 1 to 2 tablespoons of rendered bacon fat and all the diced bacon. Stir and heat through before serving.
