Fruity Ice Cream Christmas Pudding

    This cold ice cream pudding makes a cool - yet still special - alternative to boiled Christmas pudding. Perfect for summer!

    Serves: 6 

    • 1/2 cup raisins
    • 1/2 cup sultanas
    • 1/2 cup dried currants
    • 1/4 cup glace cherries, chopped
    • 1/4 cup mixed fruit peel
    • 1/4 cup freshly squeezed orange juice
    • 1/4 cup almonds
    • 1 teaspoon ground cinnamon
    • 1 teaspoon freshly grated nutmeg
    • 1/2 cup whipping cream
    • A 1.2 litre container of chocolate ice cream (or any flavour), softened

    1. In a medium bowl, combine fruit with fruit juice and spices. Cover and allow to stand overnight.
    2. The next day mix together soaked fruits, almonds, cream and ice cream. Pour mixture into a large mould and cover with foil. Freeze for at least one week to allow flavour to develop.
    3. Unmould by quickly dipping into hot water and inverting onto a serving plate.

    Fruit mince

    You could use a similar quantity of fruit mince instead of all the dried fruit in this recipe.

    This was so easy it almost felt like cheating. I used only fruit mince, blueberries and ice cream and made a simple blueberry sauce to serve over it. Of course the "pudding" started melting on the plate as soon as i put it there but it was still very frozen inside - so I cut and served it in slices. Great idea  -  12 Dec 2010
