Fruity Ice Cream Christmas Pudding
This cold ice cream pudding makes a cool - yet still special - alternative to boiled Christmas pudding. Perfect for summer!

1/2 cup raisins
1/2 cup sultanas
1/2 cup dried currants
1/4 cup glace cherries, chopped
1/4 cup mixed fruit peel
1/4 cup freshly squeezed orange juice
1/4 cup almonds
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1/2 cup whipping cream
A 1.2 litre container of chocolate ice cream (or any flavour), softened

In a medium bowl, combine fruit with fruit juice and spices. Cover and allow to stand overnight.
The next day mix together soaked fruits, almonds, cream and ice cream. Pour mixture into a large mould and cover with foil. Freeze for at least one week to allow flavour to develop.
Unmould by quickly dipping into hot water and inverting onto a serving plate. Fruit mince
You could use a similar quantity of fruit mince instead of all the dried fruit in this recipe.

This was so easy it almost felt like cheating. I used only fruit mince, blueberries and ice cream and made a simple blueberry sauce to serve over it. Of course the "pudding" started melting on the plate as soon as i put it there but it was still very frozen inside - so I cut and served it in slices. Great idea
