My mum's recipe. Absolutely delicious mince in a tomato/creamy sauce. Serve with garlic bread and a 1999 Shiraz.


Serves: 6 

  • 2 tablespoons vegetable oil
  • 450g mince
  • 1 onion, diced
  • 1 1/2 cups tomato juice
  • 1 1/2 cups water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon celery salt
  • 1/2 teaspoon ground black pepper
  • 1 beef stock cube
  • 1 1/2 cups (200g) uncooked spiral pasta
  • 1/2 cup sour cream
  • 1 teaspoon sherry
  • 3/4 cup chopped fresh parsley

Preparation:10min  ›  Cook:35min  ›  Extra time:15min  ›  Ready in:1hour 

  1. Heat oil in a large, heavy frypan over medium heat and stir in the mince and onion. Cook until onion is tender and mince is evenly browned. Reduce heat to low.
  2. In a medium bowl, mix tomato juice, water, Worcestershire sauce, celery salt and pepper and pour into the frypan. Crumble in the beef stock cube.
  3. Stir in the pasta. Cover and simmer 25 minutes, stirring occasionally.
  4. Remove the mixture from heat then stir in sour cream and sherry. Sprinkle with parsley to serve.

This is absolutely BEAUTIFUL and I changed nothing. Hubby has a bad tooth, and needs to see the dentist, which he can do in a few days, meanwhile, serving this as "soft" food, worked brilliantly. I will be serving this often though,. regardless, the taste is fabulous. The only thing I will add next time is some freshly cut basil..will complement the tomato taste well I think.
