Zucchini with Parsley, Garlic and Lemon

    There's a substantial helping of vitamin C in every serving of this simple side dish. Add more garlic if you like.

    Serves: 4 

    • 2 teaspoons olive oil
    • 600g zucchini, halved lengthways and cut thinly crossways to make half moons
    • 1 tablespoon minced garlic
    • 1/4 teaspoon salt
    • 2 tablespoons chopped parsley
    • 2 teaspoons freshly squeezed lemon juice

    1. Heat oil in a large non-stick frying pan over medium-high heat. Add zucchini. Sauté 3 minutes. Add garlic. Sauté until zucchini is crisp-tender, 3 to 5 minutes.
    2. Remove pan from heat. Stir in salt, parsley and lemon juice. Serve warm or at room temperature.

    I really like this recipe. It's very quick to make, filled with Vitamin C and tastes lovely as a quick winter breakfast as well as a vegetable side dish. Really nice!  -  22 May 2010
