Serves: 8 

  • 5 cups (1 1/4 kg) plain low-fat yoghurt

  1. Line a fine-mesh sieve with a double layer of dampened muslin. Spoon the yoghurt into the sieve and position it over a bowl. Place in the refrigerator and let stand overnight.
