Warm Red Cabbage with Pears

    In this sweet and savoury side dish, red cabbage and pears are spiced with garlic, red onion and ginger.

    Serves: 4 

    • 2 teaspoons olive oil
    • 1 small red onion, finely chopped
    • 1 tablespoon minced fresh ginger
    • 2 cloves garlic, crushed
    • 6 cups shredded red cabbage
    • 2 pears, peeled and cut into 1-cm slices
    • Salt
    • 1/4 cup balsamic vinegar

    1. Heat the oil in a large nonstick frying pan over moderate heat. Add the onion, ginger and garlic, and cook for 5 minutes or until the onion is tender.
    2. Add the cabbage, pears and a pinch of salt, and cook for 5 minutes or until the cabbage is crisp-tender. Sprinkle with the vinegar, cook for 1 minute, and serve hot or at room temperature.
