These crisp walnut biscuits make tempting nutty nibbles. They are simple to make, requiring only five ingredients, and are perfect with a cuppa.
Makes: 24 biscuits
1 1/2 cups (185g) plain flour
1/2 cup (125g) butter, at room temperature, cubed
1/2 cup (110g) dark brown sugar
2 teaspoons instant coffee powder
1/4 cup (30g) chopped walnuts
- Lightly grease 2 large baking trays. Preheat oven to 160 degrees C. Sift ﬂour into a bowl and add the butter. Reserve 1 tablespoon sugar; add remainder and the instant coffee.
- Rub mixture together until it resembles large breadcrumbs. Mould into small walnut-sized balls. Roll each ball in chopped walnuts.
- Space the balls well apart on the baking trays and ﬂatten with the bottom of a glass dipped in the reserved sugar.
- Bake for 20–30 minutes or until the edges are lightly browned. Leave to cool a little before lifting onto a wire rack to cool completely.
