    The unbeatable bean is a great low-fat, high-fibre protein source that's rich in folate (and other B vitamins) as well as minerals, including iron, potassium and magnesium.

    Ingredients
    Serves: 4 

    • 2 cloves garlic, chopped
    • 3 cups cooked borlotti beans
    • 1½ tablespoons low-fat mayonnaise
    • 3 teaspoons chilli sauce
    • 2 teaspoons lime juice
    • 2 tablespoons dry breadcrumbs
    • 2 spring onions, thinly sliced
    • 1/2 teaspoon pepper
    • Salt
    • 2 tablespoons plain flour
    • 1 tablespoon vegetable oil
    • 4 hamburger buns, toasted
    • 4 iceberg lettuce leaves
    • 4 slices tomato
    • 4 slices red onion

    1. Mash the garlic, beans, mayonnaise, chilli sauce and lime juice in a large bowl with a potato masher or fork. Stir in the breadcrumbs, spring onions, pepper and a pinch of salt. Shape into 4 patties.
    2. Dredge the patties in the flour, shaking off the excess. Heat the oil in a large nonstick frying pan over moderate heat. Cook the patties for 3 minutes each side or until browned and crisp on the outside and heated through.
    3. Place the patties on hamburger buns and top each with lettuce, tomato and onion.
