These moulded biscuits look especially pretty when painted with coloured icing.

225g white sugar

250 g plain flour

Beat the eggs, sugar and vanilla with electric beaters until pale and fluffy. Sift together the flour, baking powder and bicarbonate of soda; fold into the egg mixture. Add a little more flour if the mixture is sticky.
Wrap the dough in cling wrap and chill for about 2 hours. Roll out the dough on a lightly floured work surface to 5 mm thick.
Moisten a biscuit mould on the picture side with water and carefully dust with flour. Press mould firmly onto the dough so that the picture is stamped on it. Repeat across the rest of the dough. Dust the mould with flour each time before stamping.
Cut out the biscuits by cutting along the edges of the pictures. Place on baking trays; leave overnight to dry.
Preheat oven to 150 degrees C. Line 2 baking trays with baking paper. Bake the biscuits one tray at a time for about 25 minutes; do not let them brown. Turn the biscuits onto a wire rack to cool. Paint with coloured icing, if desired.
