Avocado Chilli Pasta

    Do something different with tinned chilli con carne - dress it up with avocado, lime, ginger and coriander and serve it on pasta.

    Ingredients
    Serves: 6 

    • 280g pasta of your choice
    • 1 avocado - stone removed, peeled and cubed
    • 1 tablespoon lime juice
    • 400g tin chilli con carne or your own recipe
    • 3 spring onions, chopped
    • 2 large tomatoes, diced
    • 1 teaspoon minced garlic
    • half a bunch fresh coriander, chopped

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cook pasta according to packet instructions; drain.
    2. In a small saucepan over medium heat, combine chilli, spring onion, tomatoes, garlic and coriander to heat through.
    3. In a small bowl, combine avocado and lime juice.
    4. Serve pasta topped with chilli mixture and avocado.

    I picked this recipe because it seemed simple and it included similar ingredients from the Caribbean sweet potato salad that I also made. Once I cooked everythinng, I was a little intimadated bc it seemed an odd combination, but, suprisingly--it was very delicious--esp if you love avocados, as I do.  -  03 Jun 2003  (Review from Allrecipes USA and Canada)
