Ginger Anzac Biscuits

    A little coconut and ginger make these traditional Aussie bikkies especially good. This recipe comes from my mother.

    Serves: 12 

    • 1/2 teaspoon bicarbonate of soda
    • 1 tablespoon boiling water
    • 2 tablespoons golden syrup
    • 125g butter
    • 1 cup (90g) rolled oats
    • 1 cup(125g) plain flour
    • 1/2 cup (90g) brown sugar
    • 1 cup dessicated coconut
    • 1 teaspoon ground ginger

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C. Grease 2 large baking trays.
    2. Melt butter and golden syrup in saucepan on low heat; add dissolved bicarbonate.
    3. In a small cup, dissolve bicarbonate of soda in boiling water.
    4. Combine dry ingredients in a large bowl, make a well in centre. Pour melted butter mixture into the well, stir to combine. Do not stir too much or mixture may become gluey.
    5. Place rounded, slightly flattened spoonfuls on the greased trays.
    6. Bake for 10-15 minutes or until golden brown.
    7. Cool on a wire rack slightly before serving.

    Very easy to make as very tasty have made these a few times now  -  09 May 2017


    I found that I needed to cut the sugar back, and add more powdered ginger, for my taste. They cooked quickly, 10 mins to light brown, but then they were chewy rather than crisp.  -  04 Jul 2012
