Tortellini with Zesty Tomato Sauce

    Serves: 4 

    • 2 teaspoons olive oil
    • 1 small onion, finely chopped
    • 3 cloves garlic, crushed
    • 1 can (400g) no-added-salt chopped tomatoes
    • 1 cup no-added-salt tomato pasta sauce
    • 1/4 teaspoon crushed dried chilli
    • Salt
    • 500g cheese-filled tortellini

    1. Heat the oil in a large nonstick frying pan over moderate heat. Cook the onion and garlic for 5 minutes or until soft. Add the tomatoes, tomato pasta sauce, dried chilli and a pinch of salt. Simmer for 10 minutes.
    2. Meanwhile, cook the tortellini in a large saucepan of boiling water according to the packet directions, until firm-tender. Drain and toss with the sauce.
