Tomato and Citrus Blush

Tomato and Citrus Blush

Be the first to make this!

This sweet yet tangy drink makes an excellent alcohol-free alternative to a cocktail before lunch or dinner. It is best made with full-flavoured tomatoes, preferably vine-ripened, and a perfectly ripe mango.

  1. Peel the skin off the mango, then cut the flesh away from the stone. Coarsely chop the flesh.
  2. Put the chopped mango, tomatoes, watermelon and orange and lime zests and juices in a food processor or blender, then purée until smooth. (Depending on the capacity of your blender, you may need to do this in two batches.)
  3. Half-fill four large tumblers with ice and pour over the tomato and citrus blush. Garnish with orange and lime slices. Serve immediately.
