Heat the oil in a large non-stick frying pan over a medium heat. Add the onion and cook for about 5 minutes or until softened. Add the carrots and red capsicum, and cook, stirring frequently, for about 5 minutes or until just tender.
Stir in the cabbage. Sprinkle the sugar, pepper and sage over the cabbage, and cook, stirring frequently, for about 10 minutes or until the cabbage is wilted.
Add the vinegar, increase the heat to medium–high and cook for a further 3 minutes, stirring to mix. Serve warm or at room temperature.
Wow, I was pleasantly surprised by this. Wasn't sure but it was really easy to make & really good. If you like sweet & sour anything this is a great vegetarian version. I'm not vegetarian but it was really good & will do again. Made it like recipe said. Very good. We ate it all. - 26 Nov 2008
