This subtly spiced side dish is a phenomenal source of beta carotene, which helps lower the risk of heart disease, stroke and cancer.

Serves: 6

  • 1 kg orange sweet potatoes, peeled and chopped
  • ½ teaspoon salt
  • 1 cinnamon stick
  • 2 tablespoons maple syrup
  • 1½ tablespoons butter or vegetable oil

Preparation:10min  ›  Cook:20min  ›  Ready in:30min

  1. Combine sweet potato, salt and the cinnamon in a medium saucepan with just enough water to cover. Boil, uncovered, stirring occasionally, until potato is tender, about 20 minutes. Drain. Discard cinnamon stick.
  2. Return potato to pan. Add 1½ tbsp maple syrup and all the butter. Mash. Serve drizzled with the remaining maple syrup.

Helpful hint

Pure maple syrup has a smoother, more subtle flavour than imitation syrups. Cheap versions are usually made from corn syrup with a little pure maple syrup added. Maple syrup will go further if you heat it.
