Mixed Fruit and Cottage Cheese Salad

    I like to make this salad when fresh fruits are really in season, but if necessary you can add tinned fruits to make up a good variety.

    Serves: 4 

    • 1 orange, zest finely grated and juiced to yield 1/3 cup (80ml) juice
    • 2 1/4 cups (500g) cottage cheese
    • 2 red apples
    • 1 1/4 cups (200g) blueberries
    • 16 dried apricots, finely chopped
    • 2 celery stalks, finely chopped
    • 150g mixed salad leaves
    • 2 kiwifruit, peeled and sliced
    • 2 nectarines, stoned and sliced
    • 1 tablespoon sesame seeds, toasted (optional)

    1. Mix the orange zest into the cottage cheese. Core and dice the apples and mix with the blueberries, apricots and celery in a large bowl.
    2. Divide the salad leaves onto four serving plates. Top each mound of leaves with equal portions of kiwifruit and nectarines and sprinkle each one with 1 tablespoon orange juice.
    3. Share out the cottage cheese and fruit mixture onto the plates and sprinkle with sesame seeds, if you like.
