Stir-Fried Asparagus & Snow Peas

    Serves: 4 

    • 1 tablespoon olive oil
    • 500 g asparagus, trimmed, bottom half of stalks thinly peeled, stalks cut diagonally into 2.5 cm lengths, leaving tips about 5 cm long
    • 125 g snow peas
    • 4 spring onions, thinly sliced
    • 1/4 teaspoon salt
    • pinch of black pepper
    • 1 small clove garlic, crushed
    • 1 teaspoon grated lemon zest
    • 2 tablespoons finely chopped parsley

    1. Heat oil in a large non-stick frying pan or wok over medium-high heat. Add asparagus, snow peas, spring onion, salt and pepper. Stir-fry until vegetables are almost crisp-tender, 2 to 3 minutes. Add garlic, zest and parsley. Stir-fry 1 minute.
