Spiced Sweet Potato Soup

    An outstanding source of beta-carotene, orange-fleshed sweet potatoes also have some vitamin C and B vitamins. All sweet potatoes offer dietary fibre.

    Serves: 4 

    • 750g sweet potatoes, peeled and sliced
    • 13/4 cups chicken stock
    • 1 teaspoon ground coriander
    • 1/4 teaspoon dried crushed chilli
    • 1/2 teaspoon sugar
    • salt
    • 2 tablespoons lime juice
    • 1 tablespoon chives

    1. Combine the sweet potatoes, chicken stock, 1 cup water, coriander, chilli, sugar and a pinch of salt in a large saucepan. Simmer, covered, for 20 minutes until the potatoes are tender.
    2. Purée the mixture in a food processor, then stir in the lime juice. Reheat before serving, garnished with the chives.

    Sweet potatoes can be substituted for ordinary potatoes in many recipes. And using the orange-fleshed ones is an excellent way to increase your beta-carotene intake. * One serving of mashed orange-fleshed sweet potato supplies almost twice the RDI of Vitamin A for an adult.

    Easy to make, especially with the stick blender. I had lots of sweet potato, so doubled the recipe. Great flavour with these spices. I also added some cumin.  -  17 Dec 2009


    How much stock should this be? I read it as 1 and 3/4 cups but that was more like puree than soup. I added extra and I think it was around 3 and 1/2 cups so should it read 3 to 4 cups of stock? Loved it though.  -  20 Apr 2018
