Combine the sweet potatoes, chicken stock, 1 cup water, coriander, chilli, sugar and a pinch of salt in a large saucepan. Simmer, covered, for 20 minutes until the potatoes are tender.
Purée the mixture in a food processor, then stir in the lime juice. Reheat before serving, garnished with the chives.
