Pasta Salad with Asian Flavours

This pasta salad uses broccoli, capsicum and red onion and is dressed with Asian-style salad dressing. Perfect for a picnic.
500g dried pasta of your choice
185g broccoli florets
1 red capsicum, seeded and chopped
1 small red onion, diced
90g snow peas
1 cup Asian-style dressing
salt and freshly ground black pepper to taste
1 tablespoon finely grated fresh ginger (optional)
1 tablespoon crushed garlic (optional)
1 tablespoon sesame oil
1/2 tablespoon sesame seeds
- Cook pasta according to packet instructions; drain, and transfer to a large bowl.
- Blanch broccoli in boiling water for 3 to 5 minutes, adding snow peas the final minute. Remove from water.
- Toss pasta with dressing. Add broccoli, red capsicum, red onion, snow peas, ginger and garlic. Toss to coat thoroughly. Season with salt and pepper to taste.
- Refrigerate for several hours or overnight. When serving, sprinkle with sesame oil and sesame seeds.
