Ingredients
Serves: 4
500g spaghetti or linguine
1/3 cup olive oil
2 cloves garlic, crushed
3 fresh red chillies, seeded and finely sliced, or 1 1/2 teaspoons dried crushed chilli
Cook the pasta in a large saucepan of boiling water according to the packet directions, until firm-tender.
While the pasta is cooking, heat the oil in a large frying pan over medium heat. Add the garlic and cook for 1 minute. Add the chillies, anchovies, lemon zest and lemon juice and cook for 1 minute.
Drain the pasta and combine with the garlic mixture, the rocket and mint in a large bowl. Toss well and top with the Parmesan.

Chillies can be mild or fiery hot, so before you cook, taste a tiny sliver; add a pinch of dried crushed chilli to the dish if the fresh is too bland.
