Snow Peas with Mint

750 g snow peas, strings removed
3 teaspoons olive oil
1/2 cup chopped fresh mint
- Steam the snow peas in a steamer or colander set over a saucepan of boiling water for 3 to 5 minutes until crisp-tender.
- Transfer to a large bowl and add the olive oil and mint. Toss to combine.
Fresh peas are a good, low-fat protein source. They are all rich in vitamin C, while green peas also contain folate and thiamin. Pea pods offer measurable potassium.
