In this unusual salad, smoked turkey mingles with juicy melon balls, crunchy toasted walnuts, fresh basil and a honey-mustard vinaigrette.

Serves: 4 

  • 3 cups honeydew and/or rockmelon balls
  • 375 g smoked turkey breast, cut into 1-cm cubes
  • ½ cup thinly sliced celery
  • 2 spring onions, sliced
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped toasted walnuts
  • 1½ tablespoons honey mustard
  • 3 teaspoon white wine vinegar
  • 2 teaspoons olive oil
  • ½ teaspoon soy sauce

  1. Toss together the melon balls, turkey, celery, spring onions, basil and walnuts in a large bowl.
  2. Whisk together the mustard, vinegar, oil and soy sauce in a small bowl. Toss the dressing with the melon mixture just before serving.
