Salsa steak

    Beef is an iron-rich protein source; it also supplies many of the B vitamins as well as zinc. Served in small quantities, with vegetables and grains, lean beef makes a healthy and flavoursome meal.

    Serves: 4 

    • 1 small cucumber, chopped
    • 1 large tomato, peeled and diced
    • 1 small red onion, diced
    • 1/2 yellow capsicum, diced
    • 1/3 cup chopped fresh coriander leaves
    • 1 teaspoon seeded mustard
    • 4 lean beef steaks (150g each)
    • 2 teaspoons vegetable oil
    • Cajun Oven Fries (recipe on this website) or other oven-cooked potatoes (optional)

    1. Combine the cucumber, tomato, onion, capsicum, coriander and mustard in a medium bowl. Put aside.
    2. Heat a heavy nonstick frying pan over high heat. Brush the steaks with oil on both sides and add to the pan. Cook for 2 to 3 minutes each side for rare; reduce the heat to moderate and continue cooking for 2 to 3 minutes each side for medium; cook for a further 4 to 6 minutes each side for well done.
    3. Serve with the salsa alongside. Accompany with the oven fries, if liked.
