    Some people enjoy this delicious butter even more than the Christmas pudding (recipe on this website) itself.

    Ingredients
    Serves: 12 

    • 125 g unsalted butter
    • 1/2 cup brown sugar
    • Finely grated rind of 1 large orange
    • 6–8 tablespoons rum or brandy

    1. Beat the butter, sugar and orange rind together in a mixing bowl, or with an electric mixer, until light and fluffy. Very gradually add the rum or brandy, a little at a time, beating well after each addition until smooth and creamy. Do not add the spirit too quickly or the mixture will curdle. Spoon the butter into a serving dish, cover and chill until required.
