Ingredients

125 g unsalted butter
1/2 cup brown sugar
Finely grated rind of 1 large orange
6–8 tablespoons rum or brandy

Preparation method

1.
Beat the butter, sugar and orange rind together in a mixing bowl, or with an electric mixer, until light and fluffy. Very gradually add the rum or brandy, a little at a time, beating well after each addition until smooth and creamy. Do not add the spirit too quickly or the mixture will curdle. Spoon the butter into a serving dish, cover and chill until required.
