A simple chicken recipe which is just delightful. Just combine apricot jam with vinegar and brown sugar, pour over chicken breasts and bake.
6 skinless, boneless chicken breast fillets
1 cup (340g) apricot jam
1 tablespoon white wine vinegar
1 tablespoon soft dark brown sugar

Preheat oven to 180 degrees C.
Place the chicken breasts in a 23x33cm baking dish. Combine the apricot jam, vinegar and sugar and pour over the chicken.
Cover and bake for 40 minutes. Remove cover and bake for a further 10 minutes.
Fantastic recipe! Cooked it the other night for the family -- lovely taste of the apricots rather than using canned Apricot Nectar. Definately will be cooking this again. Thanks for the recipe
