Chicken Breast Stuffed with Apple

    Juicy fresh chicken breasts are stuffed with fresh apple, cheese and breadcrumbs before being cooked in butter and white wine.

    Serves: 4 

    • 2 small apples, thinly sliced or coarsely grated
    • 2 tablespoons grated mild cheddar cheese
    • 1 tablespoon dried breadcrumbs
    • 2 skinless, boneless chicken breast fillets
    • 1 tablespoon butter
    • 1/4 cup (60ml) dry white wine
    • 1/4 cup (60ml) water
    • extra 1 tablespoon water
    • 1 1/2 teaspoons cornflour
    • 1 tablespoon chopped fresh parsley to garnish

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Combine apple, cheese and breadcrumbs. Set aside.
    2. Flatten chicken breasts between cling wrap to 1cm thickness.
    3. Divide apple mixture between chicken breasts and roll up each breast. Secure with toothpicks.
    4. Melt butter in large frying pan over medium heat, add chicken and brown all over.
    5. Add wine and water. Cover. Simmer for 15 to 20 minutes, or until chicken is cooked.
    6. Transfer chicken to a serving platter. Combine 1 tablespoon water and cornflour; stir into juices in pan. Cook and stir until thickened.
    7. Pour sauce over chicken and garnish with parsley. Serve.

    delicious, I used gluten free fresh bread crumbs and it was yum, will be making it again  -  17 Apr 2011


    The use of apples for stuffing gave the chicken a fresh flavor and helped retain moisture. I added one teaspoon of crushed ginger to the stuffing which combined well with the apples. Served the chicken with stir fried asparagus and carrots cuts. Will be making this meal again.  -  02 Jun 2012


    added 1tsp lemon zest a squirt of lemon in filling and rolled chicken roll in a tblsp of flour and LSA and lemon pepper mix. This added a real zingtothemix. Yummy  -  23 Jun 2012
