Basic Porridge

Rolled oats, the steamed grain flattened between rollers, has been making good breakfasts for generations. It is best served with dried fruit compote.

Serves: 4 

  • 3 cups rolled oats (not instant)
  • 1/4 teaspoon salt
  • cream, milk or buttermilk, to serve
  • brown sugar, to serve

  1. Put the rolled oats into a bowl and cover with cold water; stand overnight.
  2. Next morning, put the oats into a heavy-based saucepan and add 1 1/2 cups water and the salt. Bring to the boil, stirring, then cover and reduce the heat. Cook on very low heat, stirring occasionally, for about 10 minutes.
  3. Pour the porridge into a large, heated serving dish or individual bowls. Serve with the cream, milk or buttermilk and offer brown sugar, passed separately.
  4. For a creamier porridge, replace some or all of the water with milk.

Like u need a recipe to make porridge:-) but Id never soaked overnight and that made it cook v quickly. Also stirred in grated apple for great texture and taste - 07 Feb 2010
