This recipes tastes as wonderful as it looks. It is a healthy way to eat pasta without all the creamy fats in some pasta sauce recipes.
500g sugar snap peas or snow peas, strings removed
1 tablespoon chopped fresh dill
3 spring onions, thinly sliced
1/4 cup olive oil
1 teaspoon grated lemon zest
2 tablespoons lemon juice
125g smoked salmon, slivered
freshly ground black pepper, to taste
- Cook the pasta in a large saucepan of boiling water according to the packet directions until firm-tender. Add the peas to the water during the final 1 minute of cooking. Drain.
- Meanwhile, combine the dill, spring onions, olive oil, lemon zest and lemon juice in a large bowl. Add the hot pasta and the peas, tossing well.
- Add the smoked salmon and a good grinding of pepper, then toss again to serve.
Lovely fragrant and tasty pasta, very easy to make. I didn't have any smoked salmon so I used a can of salmon which worked just as well. will be making it again
