Enjoy this classic dessert of pears poached in wine and delicious flavours like saffron, orange rind and cinnamon for an elegant end to a meal. Try red wine for a great colour and omit the saffron.

Ingredients
Serves: 6 

  • 1 cup water
  • 1 cup white wine
  • 1 cup caster sugar
  • 1 vanilla bean, halved
  • 1/2 cinnamon (cassia) stick
  • 1/2 teaspoon saffron threads
  • 2 teaspoons grated orange zest
  • 6 firm pears
  • almond bread, to serve

Directions

  1. Combine all the ingredients, except the pears, in a saucepan in which pears will fit snugly upright. Simmer for 3 to 4 minutes or until sugar is dissolved.
  2. Meanwhile, peel pears, leaving the stems intact. Add to the saucepan, cover, then simmer until pears begin to take on a glazed appearance, about 1½ hours.
  3. Close to serving time, remove pears and reduce the syrup for 20 minutes or until it is almost toffee-like. Pour the syrup over pears and serve with almond bread on the side.
